Onion Beef Muffin Cup Sandwiches
I double the recipe and have enough filling for 24+ muffin cups. Use fresh mozzarella instead of shredded to make closing the dough easier. Also I use the butter roll dough in the bread machine (with extra flour)--2 batches make the 24.
Serve with Trader Joe's Roasted Red Pepper and Tomato Soup.
